15-Minute Feast: Cauliflower Mexican Pizza Recipe

The worst part of dieting, aside from the irritable mood and kitten-like strength you can expect, is the food. Sure, you’ll look good in a few weeks, but the last thing you want to see today is another chicken breast on a bed of broccoli. This Mexican style “pizza” has all the flavor of a cheat meal without the empty calories. Cauliflower (loaded with potassium and vitamin C) provides a low-carb crust, and replacing pepperoni with ground chicken slashes fat and ups the protein. Opt for a hearty salsa instead of tomato sauce and you’ve got a meal that’s as tasty as it is physique friendly.

                                <li>1 ½ cups fresh cauliflower</li>
                                            <li>1½ tsp Italian seasoning</li>
                                            <li>1 cup reduced-fat cheddar cheese</li>
                                            <li>3 oz ground chicken</li>
                                            <li>6 tbsp salsa</li>
                                            <li>¼ cup reduced fat Mexican blend cheese</li>
                            </ul>

    <h2 class="block-title"><span>Directions</span></h2>

                            <li>Preheat the oven to 450°. </li>
                                    <li>Break the heads off cauliflower florets (you don’t want the stem) and measure 1 1/2 cups. </li>
                                    <li>Add to a food processor or blender along with the Italian seasoning and cheddar cheese. Process until dough forms.</li>
                                    <li> Lay parchment paper onto a baking sheet and shape the dough into a round “crust.” </li>
                                    <li>Bake 10–12 minutes or until bottom looks crispy. While it’s baking, brown the ground chicken on the stove.  </li>
                                    <li>Take crust out and top with salsa, Mexican cheese, and chicken.</li>
                                    <li>Bake another 3 minutes or until cheese is melted.</li>
